Here are the 6 easy steps on how to Check Menu Engineering in Mosaic Analytics.
Step 1. For Menu Engineering, click on the “Reports” button on the leftmost part of the screen.
Step 2. Then on the “Enterprise Dashboard” button select the brand that you would like to view.
Step 3. Then on the list of reports on 2nd leftmost part of the screen click on “Menu Engineering”.
Step 4. In the Menu Engineering screen, you will be able to see your Stars, Puzzles, Plow Horses, and Dogs per brand or per outlet.
- Stars in the 1st quadrant are items that popular and profitable,
- Puzzles are items that are unpopular but profitable,
- Plow Horses are items that are popular but less profitable than Stars.
- Dogs are items that are unpopular and unprofitable.
Step 5. If you scroll down the screen further you will be able to see all the items displayed in the graph in a table with their corresponding quantity sold, menu price, and item cost.
Step 6. You can click on any item to see the costing for each item to determine what may be driving the cost of the Plow Horses and Dogs, in order to make them more profitable.
